Ingredients

1 medium tomato, diced

1 small onion, finely chopped

1 jalapeño, seeded and finely chopped (you can use half the pepper to reduce heat)

Juice of 1 lemon or lime

2 tablespoons fresh cilantro, chopped

1 garlic clove, minced (or ½ teaspoon minced garlic from a jar)

⅛ teaspoon black pepper


Combine all ingredients in a medium bowl and stir.
